I don't bring it to the blog often, but for nearly five years, Derek and I have (mostly) eaten according to the Trim Healthy Mama plan/lifestyle. It's a mix of low carb/carb conscious eating that has improved our health and glycemic index, along with Derek's blood pressure and cholesterol.
The plan allows for stevia and other sugar alcohol sweeteners, so there are plenty of options for great desserts. But when Derek's parents got me this counter top ice cream maker for Christmas, it was a game changer in the world of THM ice cream!!
It's a little loud, but doesn't need to run for long to freeze the ice cream.
A (rather young) talented blogger, and now cookbook author, Briana has been declared the Healthy Ice Cream Queen. She has all sorts of great on plan recipes and uses the same counter top ice cream maker I have. This one is like Moose Tracks, one of Derek's pre-THM faves, and this didn't disappoint!
We've also tried blueberry frozen yogurt.
And a basic vanilla (along with a few others). This one we put on top of a THM brownie.
Most of the batches are enough to store leftovers, but it has to be set out to thaw for a while before it can be scooped. I'm not complaining though... Mmmmm.
So far, the following link is our favorite variety, with a little THM chocolate syrup on top!
