Last week we had such cool weather, it inspired me to bake... a lot. Derek's Grandma Jan had given us several big zucchini so I tried some new recipes with zucchini. Here are some winners and a loser. :)
This Chocolate Zucchini Bread was really good:
(I used chocolate chips instead of melted squares. That probably changed it a little.)
This Chocolate Zucchini Cake was our favorite of the "Zucchini Bake Off".
These Zucchini Oatmeal Cookies were the flop. Not sure what happened. :) They don't taste terrible, they're just flat and have a funny texture.
These are Zucchini Pancakes. They were yummy and we topped them with a little sour cream.
This Zucchini Alfredo was also a winner!

ReplyDeleteI have a friend who makes zucchini bread. She doubles a loaf recipe, cooks it in a bundt pan and puts cream cheese frosting on it. Yum!! (if you are looking for more ideas)

ReplyDeleteI have a recipe from my sister in law for Zucchini/Apple Pie. It tastes just like Apple Pie but you use Zucchini. Let me know if you want it.
ReplyDeleteOur favorite way to eat zucchini is to peel it, slice it length-wise, butter it, put Parmesan cheese on top and either grill them or broil them just enough to soften the zucchini and melt the cheese. It is so good!

Thanks for the Zucchini Pancake recipe Amy! I made them tonight and everyone loved them - even Ryan. He put ketchup on his but the rest of us used sour cream. This recipe is a keeper!!
